Shrimp and Feta Pasta




Shrimp and Feta Pasta
 This is a recipe that has been successful for many a supper clubs and family beach meals. With a green salad spruced up with some homemade balsamic dressing and crusty bread, you will surely feel like you have died and gone to heaven! This is our favorite version.

Serves 4. Prep time 30-40 minutes (depends on how long it takes you to peel the shrimp!)

1 pound medium shrimp deveined and peeled
Pinch of red pepper flakes
1/4 cup olive oil, divided
4 oz crumbled feta cheese
 1 tsp crushed garlic
1 - 14 1/2 oz can diced tomatoes, with juice
1/4 cup dry white wine
3/4 tsp dried whole basil or 2 tbl chopped fresh basil
1/2 tsp dried whole oregano
1/4 tsp salt
Pinch of pepper
8 oz cooked fettuccine

In a large skillet, saute' shrimp and red pepper in 2 tbls olive oil for 1 minute, or until shrimp are just slightly pink. Remove shrimp from pan, place in a bowl, and toss with feta cheese - set aside. Add remaining olive oil to skillet and saute' garlic over low heat. Add tomatoes with juice and cook two minutes. Stir in wine, basil, oregano, and salt and pepper. Simmer uncovered 10 minutes. Stir the shrimp and feta mix back into the skillet and simmer for 3-5 minutes. Serve over pasta. Yum!
